Are you in New Orleans, yet? Well these candy yams is a true remembrance of Nolan’s with a hit of Savannah, Georgia. Try our tender candy yams of ginger, nutmeg, and pecans. Yes we did that!
Ingredients – Serves/4
4 medium yams
1/2 cup butter (8 tablespoons)
1/2 cup light brown sugar
1/2 cup granulated sugar
1/4 cup chopped pecans
1/2 cup maple syrup
1/2 cup heavy cream
2 teaspoons vanilla extract
2 teaspoons of lemon juice
1 teaspoon cinnamon, ground
1/2 teaspoon nutmeg, ground
1/4 teaspoon clove, ground
1/4 teaspoon ginger, ground
1 Honeycrisp apple, peeled, core, and diced /optional
1/4 teaspoon House of CeCe’s – Hot Peppers Seasoning Salt /optional

Method of Production
Preheat the oven to 350°F. Rinse the debris from the yams, peeled and sliced (½ – inch thick).
Place the yam and apples into a 9 x 13 baking dish; set aside.
Heat the butter in a large pan over medium heat until it melts. Add the sugars, cinnamon, nutmeg, clove, ginger, cream, and maple syrup and mix well. Cook the mixture for about 2 minutes. Remove from the stove and add the vanilla and lemon juice. Pour the mixture over the yams and be sure to coat all the yams completely. Cover the dish with aluminum foil and bake for 40 minutes. Remove the yams from the oven and baste them with the candied mixture. Cover the yams again and bake for an additional 20 minutes. Remove the yams from the oven and rest for 8 to 10 minutes. Be sure to top with the pecans before serving.
